No trip to Hong Kong is complete without a cruise through Victoria Harbour, one of the world’s busiest and most striking natural harbours. The spectacular Hong Kong skyline towers above the teeming traffic of commercial and pleasure craft on both sides of the harbour. The tall glass and steel buildings reflect a myriad of light and colour during the day and then turn into a dazzling neon cityscape and animated lightshow at night.

There was plenty of action for all both in and outside the stadium. Here are a few of the highlights:

• In a heart -topping grand final rampant Fiji ran in five hard-fought tries to arch rival New Zealand’s four to win the Hong Kong Sevens 35-28. Their 13^th victory at the Hong Kong Sevens.

• Fellow Pacific Islanders, Samoa won a close finish with a try in the final minute to defeat Argentina 12-10 to take home the Plate.

• Kenya held on to win 14-12 the Bowl against a very competitive team USA.

• While the players fought it out on the pitch a crowd of 39,000 strong vied for cameras for the most photographed outrageous and flamboyant costume.

• In the same costumes and sporting serious rugby fueled party attitudes they then turned the streets of Wanchai and Lan Kwai Fong into a colourful after-party carnival.

All in all, it was another Hong Kong Sevens week not to be missed in Hong Kong.

The stairs lead to a round stone walled cellar-like room with a circular bar, and then down a long, dark hallway, flanked by old Chinese wooden screens that shield private VIP rooms, to the main dining room which is dominated by dim lighting, a large Buddha draped in silk and Chinese masks that glare eyeless from the corners of the room.

The atmosphere and the spicy Northern Chinese cuisine food combine perfectly to create an extraordinary dining experience.

Two signature dishes not to be missed are the wok-fried spicy chicken, covered in a mountain of large red Sichuan peppers, and the succulent lamb ribs, served with a crispy outer skin and light garlic-chive soy sauce.

After dinner guests are likely to enjoy a nightcap or two or dance the night away in one of the many popular nightclubs and bars that line the cobblestone streets of Lan Kwai Fong, where the party never stops.

Hong Kong finally has a premier waterfront restaurant with a view over Victoria Harbour offering a spectacular 270-degree panorama of the Kowloon Peninsula.

The Watermark Seafood Bar and Grill is the first restaurant to open on the top level of the new Central ferry piers. The soaring ceiling and glass panelled walls, that can be opened to the outdoor terrace, provide unobstructed views of the harbour and an alfresco dining experience in any kind of weather.

Executive Chef, Angelo McDonnell, leads the dedicated and skilled team of chefs to surprise and delight taste buds with a modern fusion of contemporary Continental cuisine. Watermark’s signature dry-aged beef dishes, specially selected from the best cuts available worldwide, are complimented by exotic seafood and pasta dishes with an extensive international wine list.

DMC’s unique “hands-on” Hong Kong gourmet cooking experience is proving to be one of the most popular of their eclectic itineraries. Chef Denice Wai, of the 6 Senses Cooking Studio, has created a specialty cooking class for DMC guests.

The two hour class begins with a tour of a typical Hong Kong wet market where guests are introduced to the how, what and why of purchasing fresh produce, herbs and spices at the local level. Then its back to her classroom and the kitchen to learn how to prepare and cook two dishes from her extensive repertoire of local Cantonese favourites.

Denice grew up in Hong Kong and when most girls her age were playing with Barbie and Ken, she was in the kitchen helping her Dad – a professional chef who ran his own very successful catering company. Her passion for cooking and his success led her to travel extensively and explore the culinary delights in Europe, Australia, the US and Canada, before opening her own catering business in Vancouver. There she developed her own unique cooking style combining the principles of fresh organic cooking with traditional Chinese and Western styles.

She went on to refine that style and has now returned to Hong Kong where she established her cooking school, catering to local families, schools and interest groups, local business and corporate organisations, and international tourism groups.

Typical dishes on the menu include; Hoisin shrimps with Mandarin Pancake, Eight Treasure Rice with Fresh Lotus Wrap, Crispy Egg Noodles with Barbecue Pork, Sweet & Sour Pork and Stir Fry Beef with XO Sauce – all highly prized and delicious local favourites, but cooked to Denice’s own fresh, healthy, MSG, gluten and high-fat free recipes.

Guests also receive a signed, complimentary copy of Denice’s own cookbook.

A group of corporate sports professionals in town to celebrate their hard work and success found themselves in the thick of the exhilarating action of a day of traditional dragon boat racing

Organised by DMC as a challenging corporate team building event, this traditional Chinese event, turned International sport, not only tests the participant’s physical and mental limits, but also their ability to function within a team. It is strength and power of teamwork that makes the dragon soar through the water, and every team member has to learn to paddle in sync with the rest of the team to the beat of the stern drummer- one missed beat and the dragon drops behind.

The event took place in the sheltered waters on the south side of Hong Kong Island, off Deepwater Bay. The 80 participants were broken up into three teams, given the basics on dry land and then, after lunch, launched into one hour of training on the water before taking part in a series of heats and final races. There can only be one winning team, but everyone wins by sharing this special and very Hong Kong event.

AIME 2012 was everything we hoped it would be. It was a huge success for DMC and we’d like to again thank both the old and new friends who came to visit us at the Hong Kong Tourism Board stand.

This year more than 3,380 visitors joined the record number of 500 Hosted Buyers from 27 countries and the total of 779 individual exhibitors who attended the two day event held annually in Melbourne, Australia.

It’s that time of the year again and THE DMC team is busy preparing to welcome a host of corporate clients for this year’s Hong Kong 7’s. This  sports, turned social event  has grown from a minor regional sports tournament to the premier tournament of the Rugby Union World Sevens Series.

It is held annually in Hong Kong at the end of March and the party kicks off with the 10-aside tournament during the week, culminating  in the fast and furious action of the Hong Kong 7’s  at the packed-to-capacity,  40,000 seat Hong Kong stadium. The party lasts the whole week – as do the hangovers – and this event is one that that all rugby fans should experience at least once in a lifetime.

Established in 1976, it was originally  contested by teams in the Asia-Pacific region. Since the late 1980s the tournament has featured 24 teams from all over the world. The world’s premier Rugby Sevens Tournament was born over pre-luncheon drinks at the venerable old Hong Kong Club on a misty spring day in 1975. The Chairman of the Hong Kong Rugby Football Union, an amiable South African entrepreneur, A.D.C. “Tokkie” Smith, was talking with tobacco company executive Ian Gow. It was Gow’s idea, as Promotions Manager for his firm, to sponsor a Rugby Tournament with top teams from throughout the world competing.

On March 28, 1976, less than a year after Tokkie Smith and Ian Gow shared a glass, clubs from Korea, Australia, New Zealand, Tonga, Japan, Sri Lanka, Malaysia and Fiji participated in the first Hong Kong Sevens Tournament. It was an astonishing accomplishment; in less than 12 months, a team of talented, dedicated volunteers had created a sporting event that was to tackle the imagination of the rugby world. Today it has  grown to such epic proportions that it now dominates the Rugby world calendar, bringing an estimated 22,000 rugby and party fans to Hong Kong for a single week in March each year.

Debbie has just joined  THE DMC team and is a young lady who has turned her passion for travel into a career. Debbie has travelled extensively in China and prides herself on her knowledge of local culture, history and cuisine. She has also visited the US, Japan and Thailand,  but China remains her greatest passion.

Debbie is a graduate in Tourism Management from the Hong Kong Polytechnic and joins THE DMC as Project Executive.

A group from UK bathroom titan, Kohler Mira, was recently in town and they have not been able to stop talking about the great time that THE DMC staff showed them in and around Hong Kong.

While they were here they enjoyed an exclusive Hong Kong tram cocktail tour followed by dinner at Ovolugue; THE DMC Sampan Tour and lunch at the TopDeck; Peak Tram and Dinner at the Pearl on the Peak with all the trimmings; A Shenzhen Shopping Tour, followed by dinner at Aqua; topped off by THE DMC’s Insiders Tour of Kowloon, with lunch at the Jade Garden and dinner at The Quarterdeck, before heading back to the UK.

It was a very exciting and busy four days for all.

THE DMC’s staff recently surprised Conference and Incentives Manager, Adrianne Lynch,  with cake and candles on her birthday. Now we know that some girls’ don’t like to be reminded of their birthday’s, but how could Adrianne resist the heart felt enthusiasm and good wishes from all of her team. We were careful not to ask just which birthday it was we were celebrating though!
